Ok, ya’ll remember that steroid-infused extra large butt-nut I blogged about last time? Well I still had a lot left so I made another butternut squash dish. This time it was really simple & easy. I brought it to my Crossfit potluck & it was gone pretty fast!
Sauteed Butt-Nut
- cut hard skin off
- scrape inside butt-nut with spoon
- cube your butt-nut
- saute in 1 tbsp ghee/coconut oil
- add garlic pow, black pepper, rosemary, sage, a little smoked paprika & drizzle balsamic vinegar
- saute on medium – medium high without stirring too much to let brown just slightly, then mix
*Mine was way overcooked (soggy) & burnt bc I left for a few minute to go get ready for my Crossfit BBQ and totally neglected my butt-nut on the stove. NOT a good idea. Watch your butt-nut.
Since my butt-nut was so freakin large, it took FOREVER to cut slices off of that monster. I kid you not I almost threw my shoulder out trying to slice this baby. I had to have my hub come help before I strained my body any more. #bodybycat
