I found this bombiness new salad mix at Trader Joe’s. I laaaava it. It’s different and the most exciting thing going on in my life right now. #itsokifeelsorryformetoo
I’ve been making pretty much the same salad everyday with this mix. I top it with some steak and kalamata olives (my fav olives!) and then I throw a few peppercinis on top as well.
I usually just drizzle the salad with olive oil and balsamic vinegar for wetness. I know, I said “wetness.” BUT, this weekend I felt cuh-ray-zay and wanted to try a creamier salad dressing so I made an avocado based dressing.
Creamy Avo Salad Dressing:
- 1/2 avo
- 2 tbsp olive oil
- 1-2 tsp balsamic vinegar
- sea salt & pepper to taste
- optional: 1 tsp dijon/brown/horseradish mustard
Mash/stir all of the above together and toss your greens in the dressing for a creamier wetness. Eww, I said it again. I’m such a perv.
You can top your salad with the other half of your avo and get avo-schwastey.
